Chipotle Bowl
What you'll need:
- 1 cup of your Favorite Rice (Brown or Jasmine are my favorites!)
- 2 cans of Organic Black Beans (try to get them unsalted)
- 2 cans of Corn (try to get unsalted)
- 2 cans of diced tomatoes (try to get unsalted)
- 2 avocados
- Handful of spinach
- Your favorite spices (Garlic, Black Peppercorn, Onions, and Basil are my favorites!)
- Hot sauce
How to make it:
1. Pour all of your black beans into a large bowl.
2. Pour all of your corn into a large bowl.
3. Pour all of your diced tomatoes into a large bowl.
4. Cut your avocados in half and then scoop out the meat from the skin. Take the pit out and then cut into bite-sized pieces. Put these into the large bowl.
5. Add your hot sauce. (My favorite part, of course...)
6. Next, add all of the spices you desire! I love garlic because of all the health benefits associated with it... I also chose to add in basil leaves, onion, and black peppercorn.
7. Stir this all together and add a scoop or two of it on top of your cooked rice. Place spinach on top, as well.
